Description:
The Lead Cook has a dual job assisting as a prep cook in the kitchen and managing the dinner shift after the chef has left for the night. Ensuring the smooth function of the kitchen and safe and sanitary practices both in kitchen and front of house, the Lead Cook requires excellent customer service skills and the ability to prioritize tasks efficiently in order to ensure each meal service is a positive experience for our community.

Responsibilities
Assume responsibility for the management of the kitchen in the evening after the chef leaves for the day and ensure the kitchen is shut down and locked each night
Ensure equipment and work stations are clean prior and the kitchen is ready to be used for breakfast prep the next morning before closing the kitchen for the night
Set up serving stations and steam tables, overseeing food levels and restocking items in a timely manner
Prepare basic foods at the direction of the chefs by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding produce and other ingredients and trimming and cutting meat in accordance with safety guidelines and maintaining a clean and sanitary work station
Brew coffee and tea and restock all beverage areas as needed
Ensure adequate availability of utensils, condiments, and other service-related products in the dining room during meal times and whenever food is available
Provide assistance to community members in the dining room as needed
Evaluate food quality and preparedness through sanitary tasting methods
Utilize appropriate portions when preparing and serving items
Ensure serving counters and steam tables are tidy and sanitary, cleaning spills promptly and ensuring hygienic handling of food and utensils
Ensure all meals are properly labeled for contents and allergens as they leave the kitchen
Properly label, cover, and store foods at the appropriate temperature for an appropriate length of time
Ensure food in the serving area is kept at the appropriate temperature for an appropriate length of time, following all food safety standards and completing temperature logs in a timely manner
Comply with all safety policies and procedures in the kitchen and report accidents or injuries in a timely manner
Assist with other functions of the kitchen, including but not limited to tasks such as inventory, cleaning, catering service, or set-up of facilities for meetings, classrooms, conferences, events, etc. as needed
Represent Miss Hall’s School by providing professional and courteous service when interacting with community members and vendors
Function as an effective member of the Hospitality team with an emphasis on consistent and punctual attendance and high levels of customer service
Attend professional development opportunities, including continuing education related to food safety and preparation and all required in-house trainings
Accommodate the School’s need to alter the schedule and duties of this position as needed to include deep cleaning or special project needs during breaks or when the needs of the School have changed
Maintain an active presence and participate fully in campus life by attending School events, serving on committees and participating in recreational activities when possible

Required Knowledge, Skills, & Abilities
At least 2 years experience as a server and/or prep cook; institutional kitchen experience preferred
Experience supervising staff preferred
In-depth knowledge related to safety and sanitation standards in food service; ServSafe certification required
Excellent understanding of food preparation fundamentals and portion sizes
Thorough knowledge of methods, tools, and equipment used in food service; advanced knife skills required
Highly organized and detail-oriented with the ability to manage multiple concurrent time-sensitive projects skillfully, responsibly, and efficiently
Familiarity with allergen controls and labeling
Ability to remain composed during stressful situations
Demonstrated collaborative, collegial and responsible work habits with the ability to work independently with minimal supervision
Electronic media literacy and basic written communication skills
Superior verbal communication skills and demonstrated experience interacting effectively and respectfully with diverse constituencies
Demonstrated customer service skills and a sense of pride in the service being provided to the community

Physical Requirements of the Job
Must be able to function effectively while engaged in work of a moderately active nature often and strenuous physical labor on an occasional basis
Must be able to stand for the duration of a standard shift
Must have near visual acuity to read directions and product labels and to observe work in progress
Must have manual dexterity to cook, clean, and use kitchen equipment as required
Must have the ability to lift up to 75lbs, push, pull, bend, squat, reach, and twist and turn to perform essential functions of the job
Must have the ability to work in an environment with potential hazards; will be required to wear personal protective equipment when performing certain assigned tasks
