Description:
Job Purpose:
The Red Lion Inn Assistant Restaurant Manager is responsible for managing staff in a high volume, quality restaurant. Leadership, communication, organization and guest relation skills are imperative.
Essential Duties and Responsibilities:
• Open or close the Dining Room. Morning report time 6:20 AM
• Check email for any operation updates.
• Assign servers to stations, functions and room service based on rotation, strength, and experience.
• Set up, maintenance and stocking of the AM coffee station in the Lobby, and breaking down at 8:30 AM.
• Detail Dining Room stations for daily service.
• Complete a breakdown of the reservations by time and number of guests for current shift presenting at Pre-shift.
• Conduct Pre-Shift meetings and relating relevant information to F&B staff.
• Arrive at the podium 5 minutes prior to shift opening to begin promptly seating guests.
• Welcome all guests and escort them to the appropriate tables.
• Control the flow and rotation of dining areas while maximizing room capacity during peak times.
• Seat guests according to station rotation, accommodating guest requests when possible.
• Maintain keen awareness of guest perception throughout dining experience.
• Maintaining proper room temperature in dining areas.
• Maintain a clean work area including presentation of menus at all times. Maintain proper par levels.
• Assist all F&B staff when in need to assure guest satisfaction.
• Demonstrate thorough knowledge of the Open Table reservation system.
• Demonstrate thorough knowledge of the POS system used.
• Act as a line of communication between the kitchen and dining operations
• Remain in the Dining room until all guests have left.
• Coordinate with Function Supervisor, servers, and kitchen on functions, making sure all aspects of function are met.
• Oversee completion of side work and station set up
• Cash out servers and sign off on summaries after side work and stations have been checked.
• Collect and settle server paperwork. Balancing afternoon or closing deposit and service charges.
• Complete shift report after all shifts. Please note those who called out, or were late.
• Adhere to progressive discipline process.
• Filling out incident reports for both guests and staff when necessary.
• Making sure Restaurant Manager and Chef is aware of all incidents and problems.
• Enforce guidelines and policies in the employee handbook and training manual.
• Approach all encounters with guests and employees in an attentive, friendly, courteous and service- oriented manner.
• Maintain regular and timely attendance as required by scheduling. This will vary according to the needs of the inn and may include weekends, evenings and holidays.
• Maintain high standards of personal appearance and grooming
• Comply at all times with Red Lion Inn standards and regulations to encourage safe and efficient operations.
• Maintain a warm and friendly demeanor at all times.
• Respond to guest requests and complaints in a timely manner.

Requirements:
Experience: Former restaurant experience preferred, but not required.
Education: College degree preferred, but not required.

Specialized knowledge: Food preparation, alcohol, wine knowledge and wine service is beneficial. T.I.P.S. and/or Barcode, CPR, Serve Safe and Crowd Manager Certified within timely period. Employee must be able to perform calculations and have the ability to reason and analyze adequately.

Character: Friendly, courteous, and a relaxing demeanor. The employee must be reliable, trustworthy, attentive, and motivated. An overall positive attitude is necessary.
Physical: On the job the employee must bend, squat, climb, kneel, and reach above shoulder level. The employee will be exposed to high temperatures and/or high humidity during the summer seasons. Maintaining stamina is a must due to the long busy days on their feet.
